
For this Thanksgiving, it will be my sister's family, the Dalbey family, and well my family (or should I say myself). I volunteered to make cheesecake or a desert that Nick likes. He chose ultimate turtle cheesecake. I didn't think there was too much to making cheesecake. That was until I began the process. After working a 10 hour day, the least favorite thing that I wanted to do was come home and have to spend 3 or so many hours in the kitchen baking. To change the atmosphere and my attitude (I have to admit, I didn't really want to bake), I popped in the Polar Express soundtrack and away I went.
The last few times that I have made a desert out of cream cheese, my hand mixer would blow up or out (whatever you call it). This time, I invested in a higher quality brand vs the $10 mixers from Wal-Mart. I am happy to say that after making the cream cheese filling, my mixer is still working.
Like most daughters, I had to call my mother for some guidance. While talking with dad, as mom was attempting to stuff their bird, I could over hear laughter and joy of family together. It happened to be that my Aunt Judy was at my parents. The one thing I miss the most, time with family around holidays or special events. If I could have one wish, it would be to have everyone together. This year for Christmas, I feel so extremely blessed and lucky to be able to fly back to ND and spend it with family. I have to admit, anytime I think of Christmas, tears build up in my eyes. This year, I honestly am finding myself wanting more of the joy, cheer, peacefulness of family being together. I think my perspective of Christmas is changing.

It was oh so good, but sorry to hear the cheesecake took three hours. Yikes!
ReplyDeleteI know what you mean about wanting family around for the holidays. I more excited for my parents getting here on the 31st then I am for the actual Christmas day, beyond the celebration of Christ's birth, of course.
