Preparation for Cake 1

I tossed and turned trying to decide to either do a character cake or a simple round cake with rainbow design.  After talking with a co-worker, who is on course 4 of Wilton classes, she said stick with rainbow cake.  I took her word!  Tuesday night, I baked my round cake using a 8x3 pan (that way I'm not baking two separate round cakes).  I made the mistake of opening the oven door and pulling out the pan to early.  You know it if you've done it, the middle caved in.  Tonight, I made my first batch of buttercream frosting in my nice kitchen aid mixer.  I have to say I was so grateful for that powerful machine as I made a double batch of the icing. I made a huge mess as I found I had little kitchen counter space.  I also, half way through mixing, forgot I was making a double batch as I doubled only half the ingredients.  If you have ever made buttercream frosting, you know it is greasy.  Buttercream calls for 2 cups of vegetable shortening.  Doesn't that call out grease!  After mixing the batter and making multiple trials at making two consistencies (just add more water for thinner icing), I had to get dishes out of my way so I could color my icing.  That was another whole story.  Trying to open up the multiple color contains and having coloring all over my fingers, I colored 5 portions of icing.  Moment of truth, frosting the cake.  Okay, I totally have to admit I didn't think it was that hard.  I ended up initially making the icing too thick, back in the mixer it goes.  With trying to spread the thinker icing on the cake, I tore some crumbs off.  Looking at my finished frosted cake, I wish I would have done white cake.  That way, you couldn't tell I have crumbs of cake in my icing!  Its now 9:45, for the most part the kitchen is picked up, dishes hand washed completed, dishwasher started, and one tired/exhausted girl ready to go to bed.  (sorry for the poor layout, I was too tired to mess around with it).
